In the spirit of November, a time when nature reminds us of the beauty in letting go and preparing for the new, a month that prompts reflection, gratitude, and the unity of friends and family gathering again to share laughter and time over our favorite foods, here at AMI, we would like to share a hearty and wholesome dish. This dish features vibrant roasted vegetables and fluffy quinoa, all harmoniously brought together with a zesty lemon tahini dressing. It's a celebration of both taste and health, serving as a delightful reminder that good food can be both delicious and nutritious.
Ingredients:
For the Roasted Vegetables:
- 2 cups of your favorite vegetables (e.g., bell peppers, zucchini, cherry tomatoes, red onions)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried herbs (e.g., rosemary, thyme)
For the Quinoa:
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1/4 teaspoon salt
For the Lemon Tahini Dressing:
- 1/4 cup tahini
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Water to thin, as needed
Instructions:
Preheat your oven to 425°F (220°C).
In a large bowl, toss your chosen vegetables with olive oil, salt, pepper, and dried herbs.
Spread the vegetables in a single layer on a baking sheet and roast them in the preheated oven for about 20-25 minutes or until they are tender and slightly caramelized.
While the vegetables are roasting, prepare the quinoa. In a medium saucepan, combine the quinoa, water (or vegetable broth), and salt. Bring it to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and fluff the quinoa with a fork.
In a small bowl, whisk together the tahini, lemon juice, olive oil, minced garlic, salt, and pepper. If the dressing is too thick, you can add water to thin it to your desired consistency.
To assemble your Roasted Vegetable Quinoa Bowl, place a generous serving of quinoa in a bowl, add the roasted vegetables on top, and drizzle the lemon tahini dressing over everything.
Feel free to garnish with fresh herbs, nuts, or seeds for added flavor and texture.
